Last night I realized I had a nice big sweet potato in my fridge.
So, I decided to make my yummy fries to go with our burgers.
Normally, we would grill them but since we are grill-less here in Trinidad.
I baked them in the oven and they were just as good!

I always love the kind-of burnt ones…call me weird but I love the burnt pieces of most things…
Especially microwave popcorn!
- 1 giant sweet potato
- 2 Tbs Maple Syrup
- 2 Tbs Olive Oil,
- ⅛ tsp Cayenne Pepper
- salt & pepper
- Preheat oven to 425.
- Line a cookie sheet with parchment paper.
- Combine potatoes and above ingredients together in a bowl.
- Place on baking sheet and cook for 25 minutes, flipping once, half way through.
