I realize that my recipe section has been ignored for quite a while, I apologize for that. But now that things are more settled, get ready for lot more recipes. I miss cooking, it's definitely a stress reliever for me. And I'm sure my parents won't mind all the yummy eats coming there way! This could be my new favorite salad. Sometimes you want something light to nibble on or maybe you're having a heavy main meal, either way this salad is perfect. But since it has only a few components, make are to use only the finest, freshest ingredients. Enjoy!
Shaved Mushroom and Parmesean Salad
- ⅓ cup EVOO
- ¼ cup fresh lemon juice
- 2 Tbsp chopped parsley
- ¼ tsp crushed red pepper
- kosher salt and pepper
- 1 lb. fresh white button mushrooms, sliced thinly on a mandoline
- 2 oz Parmesan cheese, shaved
- In a small bowl, whisk the olive oil and lemon juice, parsley, red pepper. Season generously with salt and pepper.
- Spread half the mushrooms on a large plate. Drizzle with half of the dressing and sprinkle half of the cheese. Repeat with the remaining mushrooms, dressing and cheese. Drizzle with olive oil and serve.
